Ingredients:110g of self-raising flour; 1 teaspoon of baking powder; 110g of butter at room temperature; 110g of caster sugar; 2 large eggs; 2-3 drops of vanilla essence; 1 tablespoon of cocoa powder. For the icing: 200g of best quality milk or dark chocolate; 30g of butter.

Process: Pre-heat the oven to 170 degrees Celsius. Sift the flour and the baking powder into a mixing bowl, then add all the other ingredients and whisk them until thoroughly combined. If the mixture doesn't drop off a wooden spoon easily when tapped on the side of the bowl, add 1 or 2 teaspoons of water and whisk again. Bake in the centre of the oven for 45 minutes. Allow to cool. For the icing, melt the chocolate, stir the butter into it and pour the mixture over the cake.
