Finnish recipes:Vatruskat (video included)

Ingredients and preparation.

Ingredients: Dough: 1 kg of mashed potatoes, 2 tbsp of butter, 3dl of flour, 2 eggs, 1 tsp salt; Filling: rice, boiled in slightly salted water.

Preparation: Cook the potatoes in salted water. Peel them, smash them, add butter and let cool. Mix flour and salt to the mashed potatoes. Make small round cakes out of them.
Put one tablespoon of rice to the other side of this flat cake and turn the other edge on to it. Close the vatruskat into the shape of a half-moon.
Bake in the oven at 250°C for around 15 minutes. Brush with melted butter.
