Ingredients: 700g carrots, 1/3 (75g) cup Irish honey, 1 tsp salt, chopped parsley.
Preparation: Scrape carrots and cut into 1.3cm batons. Place in a vegetable steamer with water, cover and cook for 15 minutes. Melt butter in a saucepan, add honey and cook over a slow flame for three minutes. Add carrots to honey mixture and stir gently to glaze. Serve sprinkled with chopped parsley.
