Ingredients: 1-2 fresh cucumber, salt, 200ml vinegar, 100ml sugar, 100ml boiled water, ground pepper.
Preparation: Mix the vinegar with the sugar, boiled water and pepper until the sugar has dissolved. Shave or cut the cucumbers into very thin slices, then sprinkle them lightly with salt. Let them rest for 10 minutes. Using your hands, squeeze the cucumbers to drain off excess liquid, and then place them in the vinegar-based solution. Let the contents rest for at least 30 minutes. The resulting salad can be served immediately in a bowl or stored in a jar in the fridge.
