Dutch recipes: Old Amsterdam cheese salad

Ingredients (for 2 servings): 200g medium-mature Gouda cheese (Old Amsterdam brand, where available); 200g of cooked ham; 1/2 green pepper, cleaned and cut into cubes; 1 cucumber; 1 gherkin; 1 apple (or pear); 1 small tub of plain yoghurt; 2 tablespoons of sour cream, 1 tablespoon of lemon juice, 1/2 teaspoon of horseradish, 100ml of water, a few sprigs of dill, finely chopped; sugar; pepper; salt.

Preparation: Cut the cheese into thin slivers and the ham into cubes. Cut the gherkin into thin slices and add to the mix. Peel and dice the cucumber and add. Peel the apple and remove the seeds, then cut into small cubes and add. Mix together the yoghurt, water, sour cream, lemon juice and horseradish to make the dressing. Season with dill, salt, pepper and sugar. Add the dressing to the ingredients, stir well and leave to stand for 30 minutes. Serve with toast or bread.
