Ingredients: 8 tablespoons of red lentils, washed; 2 tablespoons of fine bulgur (cracked wheat); 1 tablespoon of rice; 1 medium-sized onion; 1 tablespoon of butter; 1 tablespoon of tomato paste; 1 tablespoon of dried or fresh mint; salt; red pepper flakes.
Preparation: Sauté finely diced onion in butter until glassy then mix in tomato paste and continue sautéing for another minute. Add 1.5 litres of beef or chicken broth, then add the lentils, bulgur and rice. Once the mixture begins to boil, turn the heat down to low and let the soup simmer under the lid until all the ingredients are soft (30-45 minutes). Season and serve hot.
