Ingredients: 100g oil; 6 cloves; 1 stick of cinnamon; 3 cardamoms; 50g of chopped onions; 200g green peas; 400g or approximately two cups of long-grain basmati rice; salt to taste; coriander, chopped, for garnish.
Preparation: Heat the oil in a wide casserole dish, then add the cloves, cinnamon and cardamom. Mix well and sauté over a low flame for a few minutes. Add the onions and sauté until they turn brown. Add the green peas and sauté for over 2 minutes. Add the rice, 4 cups of water and salt, mix well and lower the flame after it first starts to boil. Cover and let simmer for approximately 12-15 minutes. Check that the rice is cooked. In case it is not, sprinkle some more water over it, and allow it to fully evaporate. Serve hot, garnished with coriander.
