Ingredients: grilled pineapple, two tablespoons of butter, two tablespoons of brown sugar, one teaspoon of lemon juice, half teaspoon of cinnamon (optional). Peel and cut into 1.5 cm thick ring.

Preparation: In a small saucepan heat butter, sugar, lemon juice and cinnamon (if using) until bubbly. Brush the butter mixture on the both sides of the pineapple and then place it on a hot grill for 5 minutes on both sides.

The sauce: 250g of granulated sugar, 90g of butter cut into pieces, 125ml of heavy cream and half tablespoon sea salt flakes.

Heat the sugar and butter over medium-high heat in a saucepan and when the sugar and butter starts to melt, start whisking. Continue cooking the sugar until melted and it reaches a deep amber colour. Remove the pan from the heat and slowly pour in the heavy cream. Whisk until cream is incorporated and caramel is smooth, then whisk in the sea salt flakes. Serve with vanilla ice cream.
