Cream
Ingredients: 2-3dl of whipping cream, 200g cloudberries.
Preparation: Lightly whip the cream and fold in sweetened cloudberries. Serve in cones or with almond ring cake.
Cones
Ingredients: 2 eggs, 1 1/2 dl sugar, 1 1/2 dl flour, 1 1/2 dl potato starch, 125g butter, 4 tbsp water, 1/4 tsp almond extract, butter.
Preparation: Beat eggs and sugar until light and lemon coloured. Combine flour and starch and carefully stir into the egg mixture. Melt the butter and add with the water and extract. Refrigerate for 30 minutes. Heat a “krumkake” iron. Grease lightly for the first cookie only. Bake until golden, then form into cones around a wooden cone shape or drape over cups to form cookie bowls. Serve with ice cream, cloudberry cream or fruit.
